When I first ate sushi (non-vegan) years ago I didn’t like it at all.. But now that I am vegan, a few weeks ago, I went to a restaurant and I tried vegan sushi and it was completely different.. I love it! Sooo the next day, I tried at home and the result was perfect:
Since then I always fill the sushi with the same: avocado, tomato and strawberries.. This combination is perfect!
I normally use special rice called «sushi rice» but I am pretty sure you can achieve the same results with normal rice, and obviously, you can use whatever you want for the filling.. onions, cabbage, pepper..
Ingredients (for 2-3 big rolls; one roll=5-6 pieces)
- 2 cups Sushi rice
- Nori sheets
- 1/2 Tomato
- 1/2 Avocado
- 5-8 Strawberries
- Chia seeds
Cook the rice and prepare tomatoes, avocado and strawberries.
Place one nori sheet onto the sushi mat. Pick up about half a cup of cooled rice and place above the sheet. Place tomato, avocado and strawberries slices in a line down the middle of the rice.
Pick up the edge of the sushi mat, fold the bottom edge of the sheet up, enclosing the filling, and tightly roll the sushi into a thick cylinder. Once the sushi is rolled, wrap it in the mat and gently squeeze to compact it tightly. Place rolls on a serving plate and slice into 6 or 8 pieces per roll. Sprinkle some chia seeds.
